INGREDIENTS

  • 2 each 6-7 oz Cod portions
  • 1 cup halved/Med. diced tomatoes (any tomatoes will work)
  • 1 pinch red pepper flakes
  • 1 tsp minced garlic
  • 1 tsp minced shallots
  • 2 oz white wine 
  • 2 Tbsp unsalted butter
  • Salt
  • Pepper
  • 4 sliced pieces of baguette
  • 1 tsp chives

DIRECTIONS

  1. Get a cast iron pan hot with some oil in it
  2. Season the Cod with salt and pepper (make sure cod is dry before you season it)
  3. Once pan is hot place cod in pan and get a good sear on one side
  4. Turn the heat down to about medium so fish doesn’t burn
  5. Fish should take about 5-7 minutes depending on how thick
  6. In another pan sauté garlic, shallots, red pepper flakes about 1-2 minutes
  7. Add the wine and reduce till about half
  8. Add the tomatoes (squeeze them so the juices come out)
  9. Cook and reduce sauce and then add butter to make your sauce stirring to combine everything season with salt and pepper
  10. Grill or toast your bread
  11. Place fish on bottom of plate and then add the sauce all over the fish
  12. Place the bread around the plate and then garnish with chive
