Alaskan Cod with White Wine Spicy Tomatoes

INGREDIENTS
- 2 each 6-7 oz Cod portions
- 1 cup halved/Med. diced tomatoes (any tomatoes will work)
- 1 pinch red pepper flakes
- 1 tsp minced garlic
- 1 tsp minced shallots
- 2 oz white wine
- 2 Tbsp unsalted butter
- Salt
- Pepper
- 4 sliced pieces of baguette
- 1 tsp chives

DIRECTIONS
- Get a cast iron pan hot with some oil in it
- Season the Cod with salt and pepper (make sure cod is dry before you season it)
- Once pan is hot place cod in pan and get a good sear on one side
- Turn the heat down to about medium so fish doesn’t burn
- Fish should take about 5-7 minutes depending on how thick
- In another pan sauté garlic, shallots, red pepper flakes about 1-2 minutes
- Add the wine and reduce till about half
- Add the tomatoes (squeeze them so the juices come out)
- Cook and reduce sauce and then add butter to make your sauce stirring to combine everything season with salt and pepper
- Grill or toast your bread
- Place fish on bottom of plate and then add the sauce all over the fish
- Place the bread around the plate and then garnish with chive
