Blackened Cod Tacos

INGREDIENTS
- 12 1 oz pieces of fish cut on the bias
- 12 corn or flour tortillas
- 2 Tbsp blackening spice
- 2 small dice English cucumber (take the seeds out)
- 1 julienned pickled red onions (or raw red onions)
- 4 oz of your favorite salsa
- 1 lime cut into wedges
- 1 bunch cilantro

DIRECTIONS
- Season your fish with the blackening spice
- Sear in a pan or grill until cooked about 5 minutes
- Toast your tortillas 10 seconds each one
- Mix your pickled onions and cucumbers
- Place fish in tortillas, top with onion cucumber mix and cilantro on top
- Squeeze lime on top and enjoy
